Happy Hump Day!! Do you guys feel like this week is going by fast? I personally feel like it’s flying! Maybe that feeling will change once I am sitting at work though
Breakfast has been the same as always. I sure did miss my homemade bread when I was at daddy’s this weekend. Note to self: always bring up some bread!
2 slices homemade bread with almost butter sprinkled with flax and a naner
Both for 99 cents each. Seriously? Butternut squash for 99cents? I nabbed up two
I was really impressed with the cereal, and figured for 99cents it was worth a shot
Oh and it is stinkin’ DELISH. If you can find this cereal in your store, pick some up!
After grocery shopping I picked up my kettlebell for a good sweat. I came up with this workout last week and have been dying to share it with you guys. It’s a killer!
Goblet squat – 15
Jump squat – 15
Pushup with knee drive – 5 each
Kbell swings – 20
Kbell lunge – 10 each
Jump lunge – 20 total
1 arm high pull – 10 each
1 arm swing – 10 each
Clean and press – 10 each
Mountain climbers – 40 total
Squat and press – 10 each
Burpees – 10
Rest 30 seconds between sets. Repeat twice. It’s totally normal to be drenched in sweat and shaking all over after
After my killer workout, I was starving, so I whipped up a quick lunch.
2 egg omelet with spinach, along with sweet tater fries and broccoli
A little bit later I made myself some fresh juice as a snack
3 carrots, 2 small apples, 1 stalk celery
For dinner I really had the urge to try something different. So, I grabbed my bread machine and got to work!
Black Bean, Broccoli & Feta Calzone
1 cup water
1 1/2 tbsp olive oil
2 cups plus 2 tbsp flour ( I used whole wheat & white)
1 1/2 tbsp honey
3/4 tsp salt
2 tsp yeast
2 tsp cumin
2 tsp chili powder
Filling (makes 2 calzones):
1/2 C black beans
1/2 C feta
1/2 C broccoli
handful spinach, chopped
1 clove garlic, minced
Throw everything into your bread machine and set to dough cycle. Once dough is done, split the dough in half. Save the other half for another day. Take the half you have left and split it in half again. Roll out as thin as you’d like, and stuff with the filling. Seal edges well, and cut some holes in the top for a vent. Brush top with olive oil. Heat oven to 375 and bake for 15-20 minutes or until golden.
served with greek yogurt/salsa mix and homemade guacamole
Oh my goodness. This is so delicious! I was shocked to look over at Ninja’s plate and see that he inhaled his. He must have been either really hungry or he really liked it. I’m going with the second one
